  2. Health Importance • According to (Sopa) soybean processor Association of India ,Soya food may act as a preventive measures for • heart diseases • Cancer, • Diabetes, • Osteoporosis • High blood cholesterol

Beneficial effect • Several studies have established that eating 25 to 50 gm of Soya on a daily basis can reduce the levels of bad cholesterol in blood and therefore it reduce coronary heart diseases. • Soya is today also accepted as an excellent alternative for those who are fighting obesity.

  4. Production • Production of Soya bean has been meteoric rise India. 0.466million metric tonnes of Soya bean production in 1981-82, and went up to 9.308 million metric tonnes I 2008-2009.it is estimated to go up to 9.725 million metric tonnes in 2009-10.

  5. Application in bakery • Soya provide functional benefits to a bakery. • In the preparation of snack food ,Soya protein crisps can provide the required crispy texture. • Improve shelf life of cookies and cake. • It also used in emulsifying and binding, and water absorption. • Defatted Soya flour can be used in preparation of cookies, crackers, muffins ,breads, cereals ,pancake, cake ,pizza etc. • Soya chunks can be used in meat preparation, and Soya also used as nutritional ingredient in milk and beverages.

Soya flour • Used as a moisture retention, fat absorption,improveing whiteness, and as a dough conditioner. • It contain less than one % of oil. • Full fat Soya flour contains 18-20 % oil. • Defatted Soya flour can be used in breads, cakes, doughnuts, sweet pasta. • Toasted Soya flour is used in crackers, cookies, and cereals. • Enzyme active Soya flour is used in white bread. • Soya flour is very useful baking and replace wheat flour, it help in endowing structure to bakery product.

  7. Soya product • Soya oil, Soya nuts, Soya papad, Soya milk, nuggets and granules etc. • Tofu is one of the most popular Soya milk product, it is use as replacement for meat sausages in product like hot dogs, it also sued as replacement for paneer.

  8. conclusion • Soya is most nutritious and cheap in India. • It help for malnutrition ,a major cause of child . • It is a high protein diet affordable to all class people. • Low calories product in bakery.
