  1. Chicken Tikka Masala Instructions At SPPS Nutrition Services, one of our missions is to embrace diversity. We accomplish this as department by bringing global flavors to our menu. As we strive to provide more culturally relevant foods, we will feature new menu items throughout the year. We are excited to bring Chicken Tikka Masala to our lunch lines. This is an Indian dish, which includes a tasty masala sauce. Masala sauce was added to satisfy the desire of British people to have their meat served with gravy. Chicken Tikka Masala is served in restaurants around the world, including restaurants in Britain and North America- and now, SPPS!

  2. Grease a full 4 inch deep hotel pan

  3. Pour 10lbs of chicken strips into greased pan

  4. Pour 1 gallon of Tikka Masala sauce over chicken

  5. Mix well until chicken is well-covered with sauce

  6. Cover hotel pan with metal lid or aluminum foil

  7. Place pan into preheated 350 degree oven and bake for 40 minutes or until internal temperature reaches 165 degrees

  8. Remove pan from oven and hold in a warming cabinet until serving time.

  9. Scoop ½ cup of brown rice with either a No. 8 scoop or 4oz spoodle

  10. Serve Tikka Masala with a 6oz spoodle over brown rice.

  11. Garnish with chopped cilantro
