  3. MADRA REPICES • Key Ingredients: clarified butter , chickpeas , cloves, cumin seeds , raisins , turmeric , yogurt, salt , green cardamom1. Heat ghee on medium flame.2. Add cardamoms, cloves, black cardamom, cloves powder, turmeric, cumin and kabuli cannas and mix well3. Add cooked chickpeas and mix it well with the macula . add salt and Chili powder for taste.4. Increase the heat to medium.5. then serve with steamed rice chapatti

  5. BABRU RECIPES • Key Ingredients: Black gram dale, flour, baking powder, salt, refined oil.Recipes:-1. Soak the dale in warm water and leave overnight.2. Clean and husk the dale. then grind it to a paste.3. Add the baking soda to the flour along with some water & knead it well.4. Cover from all sides and seal well. dust with flour and roll out medium size poor is.5. Heat a Kauai with oil & when hot, gently slide the pooris and fry on both sides.6. Drain on kitchen towel & served with channa madra.

SIDU RECIPES • Key Ingredients: wheat flour, dried yeast,warm water, salt, cheese, green chilies,boiled green peas, walnuts, garlic and ginger, ghee, roasted peanuts, sugar.recipes:-1.Take warm in a bowl and add yeast and sugar.Don't mix them take rest them 15 minutes. after that we put wheat flour and 1/4 tsp salt in another bowl & add yeast water mixture in the center of flour bowl.2. Now we make soft and smooth dough. After that we add little water while making the dough. Cover it with polythene and keep it aside for 3 hours.3. Take boiled green peas, walnuts, garlic, salt and ginger, green chilly, roasted peanuts now grind it. add paneer to mixture and mix it well.4.when the dough is double in size another half minutes divide the dough into 4 equal parts.5. Fold the dough in half fold the edge back over it self then pinch the edges firmly seal. now sidu is ready for steam cook for 15 minutes.6.serve it with green chutney.

KULLU TROUT • Key Ingredient:- trout/fish , Crushed coriander seeds, Red chilli flakes, Lemon rind , Lemon juice , Mustard oil , Salt , Dill leave.Recipes:- • Clean and wash the fish.  • In a bowl, add the fish, salt, dill leaves, crushed coriander seeds, chilli flakes, lemon rind, lemon juice and mustard oil. • Rub the marinade all over the fish and keep aside for about 10 minutes. • Heat oil in a pan and add the marinated fish and cook on both sides on low flame for 10 minutes.

  11. AKTORI RECIPES • Key Ingredient:- Buckwheat Flour , Wheat Flour ,milk ,water, baking soda, sugar , oil.Recipes:-1. In a bowl, mix buckwheat flour and wheat flour together. 2. Now add milk and water in equal quantity. Mix this into a fine thick batter. 3. Add a teaspoon of baking soda to it and again mix well. 4. Lastly, add sugar as per the taste and keep aside to rest for few minutes. 5. Now take a frying pan and heat a tablespoon of oil. 6. Pour a ladle full of batter in the pan and spread it little bit. Cook this on low flame. 7. When small bubbles are seen on the surface of the cake, flip it over and cook the other side for few more minutes. 8. Once both the sides get cooked, take it out on a plate. 9. Serve the Aktori with ghee or honey as topping.
