Cut it Out… Cutting open cells releases enzymes and exposes the delicious insides to oxygen – oxidation. When cutting, cut as few cells as possible! Oh….and Pizza is a Vegetable!

Fungal texture The hyphae form a mesh – cooking breaks only hydrogen bonds; the texture doesn’t change much. Longer cooking removes more water and will make the fungus more dense.
