Current authorities Regulating Food Protection in the US U.S. Dept. of Agriculture — Production and distribution of meat, poultry and eggs U.S. Food and Drug Administration - Production and distribution of all other packaged food FDA also produces Model Food Code-constantly verifying its scientific basis in FDA labs States/local governments - Permit/inspect all foodservice and retail facilities (local health depts)

    3. RESTAURANT INDUSTRY FACTS Projected sales in 2006 : $ 511 billion Number of restaurants (U.S.) : approx. 925,000 Number of estimated meals served (2006) : 70 billion Number of employees: 12.5 million (largest employer in the U.S. besides government)

RESTAURANT INDUSTRY CHALLENGES The typical food-service employee is: under 30 years of age (54%) female (55 %) single (67 %) working part-time and averaging 25 hours a week (many do not have sick leave or health insurance provided by employer) living with in a household with two or more wage earners (78%)

    5. Foodborne Illness Foodborne Illness (FBI) is a disease that is transmitted to people by food that contains harmful substances.
