  4. 酿酒原理 酒饼中的霉菌产生淀粉酶起糖化作用,将淀粉变成可发酵性糖,酵母菌将糖转变成酒精和二氧化碳(还会产生中间产物如乙酸乙酯等芳香性化合物,使酒变得有香味)。

  5. 酵母菌形态 酵母菌是单细胞真核生物,它的形态通常有球形、卵圆形等。比细菌的单细胞个体要大得多,一般为1~5微米,无鞭毛,不能游动,有典型的真核细胞结构, 有细胞壁、细胞膜、细胞核、细胞质、液泡、线粒体等,有的还具有微体。

  6. 酵母菌菌落 酵母菌的菌落比细菌的菌落大而厚,表面光滑、湿润、粘稠,容易挑起,质地均匀,正反面和边缘、中央部位的颜色均一,菌落多为乳白色,少数为红色,个别为黑色。
