Bread Bread is a very important component of the diet. Latvians like: • - Rye flour bread baked in large loaves • - Soursweet bread, baked from fine rye flour • - Karašas and cakes, baked from barley flour.
Soups Soup is an important ingredient in Latvian kitchen. Soups are usually prepared withmeat,milk,vegetables,fish and mushrooms. During the summer, when it’s hot, people eat cold soups with sour milk.
Cold dishes Latvian eat garnished bread with butter, cheese, cottage cheese, bacon and herring. Since ancient times Latvians cook cold meat jelly and stuffed pike.
Meat meals Pork is the most favourite in Latvian kitchen. It is typically served with porridge or sour braised cabbage.
Fish dishes Latvians usually eat marinated herrings with bread and potatoes or in salad.In the regions near sea, people eat salmon. People also preparefish on coals, wrapped in a wet paper or stew it in layer with fat.
Cereal-based food Latvians make porridge from barley, rye and wheat flour or grains. Porridge is served with butter, fat or roast pork. Dumplings are alsomade from wheat flour.
Desserts Latvians cook different sweet porridges, for example,barley porridge with dried apples. Jelly, made from oat flour sweetened with honey, isone of the favourite dishes. There is also bread soup, cooked from mature bread. Latvians make pies pretty often.
Drinks Latvians drink herbal tea, birch juice, water with honey, beer and bread water called «kvass», which is made of sour bread poured with water and blackcurrants or mint.
Easter eggs filled with salmon Components: • 6 hard-boiled eggs • 200 g of smoked salmon • 100 g of mayonnaise • caviar • greens • salt • pepper Preparation: Cut the boiled eggs into 2 parts and take out the yolks. Mash the egg yolks and mix with mayonnaise and chopped smoked salmon. Put the mixture into the egg-halves, garnish with caviar and cover with greens. Other kinds of fish or fillings can be used instead of salmon.

Cut the bacon into small squares, fry the onion. When the onion and bacon become bright, add butter and salt. Mix all the ingredients and make small balls - pea clumps.
