Types of Yeast Rolls & loaves. Crescent Rolls. A crescent roll is made when you flatten the dough, cut it into triangles, and the roll it up. Cloverleaf Rolls. Cloverleaf rolls have the shape of a cloverleaf. The dough is cut into pieces, rolled into small balls, and baked in a muffin tin.
