PUEBAS QUÍMICAS • NNP (Nitrógeno No Proteico) (500 mg/100 g) • Hidrólisis de proteínas por enzimas bacterianas • Por proteinasas musculares • N-BNV (Nitrógeno de Bases Nitrogenadas No Volátiles) (30 mg/100g • Actividad microbiana • Enzimas de los tejidos • TBARS (Acido Tiobarbitúrico) 0,5 AM/kg (AM=Aldehído malónico) • Oxidación de lípidos por bacterias • Indol (<25 ug/100g) • Degradación de Triptofano por bacterias (E. Coli, Proteus vulgaris, P. morganii, etc)
