The Power of Collaboration In this session you will learn about: • The client’s unique vision • The value of the MAS and Design consultant partnership in the master planning process • How the team was assembled • The relationship between non-commercial and commercial concepts/consultants • How this process unfolded on this unique project • How our collaborative approach resulted in foodservice venues that will push the envelope for non-commercial foodservice
The Power of Collaboration UNIQUE VISION • Large B&I client based in Europe • US Headquarters campus with several traditional foodservice operations • Desire to bring European Village concept to US campus • Smaller venues with restaurant / café feel and experience • Unique vision integrated into established campus • Need validation of the concepts • Need to bridge the gap between the vision and the design

The Power of Collaboration PROCESS Facility Tours Client requested to come to Seattle to tour with Culinary Options Logistics arranged and tours accompanied by Karen Malody • Tour existing regional restaurants that represented the spirit of the concepts being recommended • Including The Commons project on the Microsoft campus (12 independent restaurants managed by Compass) • See physical lay-out • Understand the logistical challenges • Learn more about how they created the concepts • Garner lessons learned from that project • Experience more fully the cuisines and restaurant design of representative examples
The Power of Collaboration PROCESS Concept Revisions • CT return to campus to meet with Client stakeholders, architectural firm representatives and kitchen design team representatives • Concepts slightly altered based on physical plant issues, kitchen design challenges and recommendations and client concerns • Revised document summaries, capturing all agreed revisions, created by Culinary Options and sent to Client for dispersal to required parties
The Power of Collaboration PROCESS Preliminary Design Review • Designs sent back to the CT for review • CT tasked with identifying critical elements from the agreed final concepts that did not appear in the drawings • Excel spreadsheets created to assist the CT in noting and commenting on omissions and/or items not previously discussed • Goal: final drawings represented as best as possible the optimal operational, esthetic and culinary execution of the concepts
The Power of Collaboration PROCESS Existing Café Considerations CT requested by Client to create three more straw man restaurant/culinary concept models that could meet their current needs within the existing two major cafes • Research on emerging concepts begun – again based on increased knowledge of the campus audience and current price sensitivities • Documents created to support these three new concepts as had been done in Phase I
The Power of Collaboration RESULTS • Validation of Client’s Vision • A revised strategic plan • Outline of specific concepts including menu and equipment concepts • Proof of space diagrams showing space needs and sample layouts for each concept • Data supporting the viability of the concepts • A road map for the design team • Follow-up Review / Consulting
