  2. INTRODUCTION Now we have eating habits arising from social and technological development in the late nineteenth century. Formerly the diets were based mainly on natural foods and commodities, obtained directly from agriculture and / or animal husbandry and fishery when these techniques were developed. En la actualidad tenemos unos hábitos alimenticios derivados del desarrollo social y tecnológico de finales del siglo XIX. Antiguamente las dietas se basaban principalmente en alimentos naturales y básicos, obtenidos directamente de la agricultura y/o ganadería, así como de la pesca cuando se desarrollaron dichas técnicas.
