Short And Simple Egg Bhurji Recipe Today we are going to make a typical Mumbai dish that is known as egg bhurji recipe or anda bhurji recipe. Egg bhurji is a spicy scrambled egg for which we are going to use onions and chop them nicely. Ingredients: 1 spoon turmeric 1 and half spoon red chili powder (as per your choice) 1 and a half spoon of pav bhaji masala. 2 onion 2 tomatoes 4 eggs

Give it a quick stir and allow the onion to sweat a little. In the meantime, chop the ginger and green chili. Add them into the pan. Give it a quick mix. While it saute, chop two tomatoes. Add the tomatoes in the pan. Continue sauteing it, till it becomes pulpy. Add salt to taste. Along with this start adding powder spices mentioned above. Adding pav bhaji masala is the secret trick to the recipe. Mix it well. Make sure the masala is cooking well. At the time you a low the flame. Cook the masala nicely for 5-7 minutes. In the meantime, break the eggs and start whisking them. You can take 4 eggs for this recipe. Add a little bit of salt to season the eggs and whisk them properly. Then, the beaten eggs go straight into the masala. This needs to be mixed thoroughly on low flame. Keep scraping the sides. And now when the mixture is mixed well you can increase the flame. Make sure you keep stirring it. One thing which you should keep in mind is that an egg cooks at sixty degrees, so any temperature beyond that the egg is done well. The egg bhurji recipe is ready.
