A mousse is a prepared food that incorporates air bubbles to give it a light and airy texture. • It can range from light and fluffy to creamy and thick, depending on preparation techniques. • A mousse may be sweet or savoury. • Dessert mousses are typically made with whipped egg whites or whipped cream, and generally flavoured with chocolate or puréed fruit.
Method: • Dissolve the gelatine and keep aside. • Melt chocolate and add butter stir till butter melts completely. • Add egg yolks & mix well. • Add dissolved gelatine & mix well. • Fold whipped cream into the chocolate mixture. • Beat the egg whites and sugar well till soft peak and fold into the chocolate mixture. • Pour the mixture into molds &set in the refrigerator for about at least 3 hours.
