  1. SIMPLE FRUIT CAKE RECIPE The quantity of fruit and nuts in fruitcake greatly influences its personality. Depending on the recipe, taste, or market, they can include a wide variety or be confined to particular fruit or nuts. Fruit options include lemon and orange peel, pineapple, raisins, dates, currants, figs, apricots, and citrons (the preserved rind of the fruit that looks a lot like a lemon). All of these fruits have been preserved, dried, candied, or coated to eliminate the majority of their natural moisture and extend their shelf life. There is a chance that food coloring was used to color the cherries and pineapple in particular. Among the nuts are walnuts, pecans, almonds, and pine nuts; the cake is made with broken bits of these nuts, although walnut or pecan halves can also be used. Prepare your pan and turn on the oven. Set the oven's temperature to 325 F. Butter an 8- inch springform pan very lightly. Put a piece of parchment paper that has been cut to fit the bottom of the pan on top of the buttered base. Wrap a second long piece of parchment paper around the pan's buttered sides. Leave a few inches of parchment paper protruding from the pan's sides. After the fruitcake bakes, this will make removing it simpler. In a bowl, combine the butter, light brown sugar, and dark brown sugar. Place them in the beater basin of a stand mixer if you have one. If not, pull out a hand mixer. The ingredients should be beaten until the mixture is frothy and light. Make sure your butter is not entirely frozen and solid; else, beating will be challenging. Eggs are added. Beat the mixture after adding one of the eggs until the egg is well integrated. Remix the mixture after adding the second egg. Stir in the final egg until well-mixed. Lemon zest, orange juice, and brandy should all be added. The mixture needs to be properly mixed after each addition. Fruits, mixed nuts, and ground almonds should be incorporated (candied and dried). Use a spatula to gently incorporate these ingredients into the batter by making circles with your wrist. You won't get the volume you made by beating the butter if you only whisk or beat the batter. In another basin, combine the flour, salt, and baking powder. For the leavening agent to be thoroughly incorporated, whisk these ingredients for 20 seconds.
